Most American lamb you'll find at a supermarket is either imported from Australia or New Zealand (where grass-finishing is the norm, but the meat travels frozen for weeks) or domestic and grain-finished in a feedlot. Ours is grass-finished and harvested locally — the result is a milder, cleaner flavor than aged imported lamb and a richer flavor than grain-finished domestic lamb. If you've avoided lamb because of an experience with "gamey" meat, ours is worth a try.
