You buy half or a whole pastured hog, processed at a USDA facility and cut to your specifications. You get every part you want: pork chops, roasts, ham, bacon, sausage, ribs, bones, lard. It's the most cost-effective way to keep real pastured pork in your freezer for the year.

How much meat will I get?

  • Half hog: roughly 60–80 lbs of vacuum-sealed cuts
  • Whole hog: roughly 120–160 lbs

Exact weight depends on the animal and on what you choose for your cut sheet — for example, whether you want bacon and ham cured, or fresh.

Half hog: ~3 cubic feet. Whole: ~6 cubic feet. Easier to absorb than a beef share — most households can fit a half hog in their existing freezer alongside a quarter beef.

It's how you tell the processor what you want. The main calls: how thick to cut chops, whether to grind shoulders into sausage or leave whole as roasts, whether to make ribs, whether to cure bacon and ham (and how), whether to render lard from the fat. We walk you through it after you order.

No hormones, ever. We don't use prophylactic antibiotics either — meaning we don't dose the herd or flock as a routine practice. If an individual animal gets genuinely sick and needs antibiotics to recover, we treat it; that animal then gets pulled from our program and is not sold as Etta Hills meat. This is the honest answer; "never ever" claims usually aren't.
